Smoothies are one of those quick and easy breakfasts (or snacks!) that can be made with almost anything on hand. And we welcome suggestions for winning flavour combos. That’s why this lemon blueberry one from Joy McCarthy’s new cookbook, The Joyous Cookbook is such a winner. Not only is it a bright and citrusy bevvy that tastes just like the warmer days ahead, but it’s pulled together in almost an instant using pantry staples and freezer foods. 

Lemon Blueberry Cashew Smoothie

I love smoothies because you can slurp your way to sustained energy and great digestion when you don’t have time for anything else. Few days go by that I don’t have a smoothie. These days I don’t make my smoothies as “green” as I used to because I almost always share them with my daughter. I can easily down super-green smoothies, but for Vienna they just aren’t as palatable as this one.

I make most smoothies with whatever I have handy. I don’t shop specifically for my smoothies, but there are always berries in my fridge or freezer and I always have some nuts or seeds on hand. I also always make sure I have some kind of nut milk. I love the creaminess of cashew milk, and it’s fairly easy to find at large grocery stores nowadays, but if you can’t find any, just use almond milk or whatever you can get your hands on.

Ingredients

  • 1½ cups fresh or thawed frozen blueberries
  • 1 cup unsweetened plain full-fat coconut yogurt or sheep’s milk yogurt
  • ½ cup oat flakes
  • ½ cup raw cashews
  • 5 Medjool dates, pitted
  • Zest and juice of 1 lemon
  • 1 cup unsweetened cashew milk or other nut milk
  • Filtered water, just enough for desired

Preparation

Place all the ingredients, except the water, in a high-speed blender. Blend for 30 to 60 seconds, until smooth, adding the water only as needed.

Yield: Makes 2 smoothies
