Zingy, sautéed snow peas that promise to be a memorable part of your dinner party
These are a far cry from the steamed peas you almost made — phew!
One could salivate just looking at this these snow peas, or just reading the recipe. Mustard, shallots, lemon juice and zest — these peas are not the humble bowl often forgotten in the kitchen. They’ll pop on your dinner table, and burst with flavour that rivals anything else you’re serving, in the best way.
Lemon Dijon Snow Peas
Ingredients
- ¼ cup minced shallots
- 1 ½ tbsp olive oil
- 1 tbsp grainy Dijon mustard
- ¼ tsp salt
- Pepper, to taste
- 3 cups snow peas
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
Preparation
In a small bowl mix together the shallots, olive oil, grainy Dijon mustard, salt and pepper to taste. Heat a pan over medium low heat and add the mixture to the pan. Move the shallots around the pan, sautéing for about 1 minute. Add the snow peas to the hot pan and sauté for 2-3 minutes or until they are bright green. Remove the pan from the heat and add the lemon juice. Transfer the snow peas to a platter, garnish with lemon zest and serve immediately.
