How that tasty perch gets from the boat deck to your plate

The Taylor Fish Company is a small fish processor in Wheatley, Ont. that ships perch, pickerel and other fish across North America.

This week, I went to Wheatley, Ont. According to the local harbour authority, this tiny community on Lake Erie is home to the largest freshwater commercial fishing fleet in the world.

I didn't, however, climb aboard a boat.

I wanted to find out what happens to the fish after it's caught. So I paid a visit to the Taylor Fish Company. It's a fish processor that ships their product across North America, including to many high-end restaurants in Toronto.

Looking to buy some fresh Lake Erie fish?

If you're looking to buy fish to prepare at home, you're best off heading right to the store. The Taylor Fish Company is located at 419 Erie St. S in Wheatley. They are open Monday to Friday from 8-5 and Saturday from 8-3.

Another way is to try the fish at a local restaurant — Birdie's Perch, that double-decker fish truck near Point Pelee, buys their perch from Taylor, for example.
