Ship to Shore's new smoker brings a taste of the south to P.E.I.

A sous-chef at a restaurant on P.E.I.'s North Shore is finally reaping the fruits of his labour, after spending much of the winter building a four-metre-long smoker in his garage.

A sous-chef at a restaurant on P.E.I.'s North Shore is finally reaping the fruits of his labour, after spending much of the winter building a four-metre-long smoker in his garage.

Aaron Jackson, sous-chef at Ship to Shore in Darnley, P.E.I., affectionately calls his creation Ms. Tank.

Jackson finally got Ms. Tank to the restaurant about a week-and-a-half ago, thanks to some friends who helped him with the move. The enormous oven sits in a field outside the restaurant.

"Most cooks don't build their own oven but in my case I had to," he said. "Her name is Tank. She is beautiful, but it is kind of like putting a bow on a pig."

'You need the proper tools to do your trade'

"You need the proper tools to do your trade and really this was the best way for me to go about it, because there is just not a lot of this stuff happening in Atlantic Canada," he said.

Jackson's parents are snow birds and he has sampled a lot of southern barbeques while visiting them. He felt he had to bring that taste back to P.E.I.

Ms. Tank's specialties are pulled pork, brisket, turkeys and salmon. Jackson said she is proving to be a hit with customers.
