Fish tacos from Ad Mare on D is for Dinner

This weekend's food truck rally in Ottawa will bring a wide variety of food including grilled fish, courtesy of Ad Mare.

The food truck, run by Mario and Miriam Burke, has brought seafood to downtown Ottawa since 2013.

The Burkes visited D is for Dinner for this week's segment and shared their fish taco recipe with All In A Day host Alan Neal.

Fish tacos

Ingredients

  • Eight 4 to 6 inch tortillas.
  • Guacamole:
    • 2 ripe avocados.
    • 1-2 cloves fresh garlic.
    • 1 tbsp. fresh cilantro.
    • 1 lime.
  • Fish (500 g fresh cod or haddock fillets).
  • Glaze:
    • 1/2 cup honey.
    • 2 chipotle peppers in adobe sauce chopped.
    • 1 tbsp. grated orange zest.
    • 1 clove minced garlic.
    • ½ cup barbecue sauce.
  • Pico de gallo:
    • 2 medium tomatoes, diced.
    • 1 red onion, finely chopped.
    • ½ fresh jalapeno pepper, seeded and chopped.
    • 2 tbsp. fresh cilantro, finely chopped.
    • 1 small clove fresh garlic.
    • 1/8 teaspoon salt.
    • 1/8 teaspoon pepper.
  • Chipotle mayo:
    • 1 cup mayonnaise.
    • 1-2 chipotle peppers from a can of peppers in adobe sauce.
  • ½ cup fresh or frozen corn niblets.
  • Shredded lettuce.

Instructions

  1. Brush chipotle glaze on fish fillets.
  2. Cook over medium-high heat for 5-7 minutes per side or until cooked through.
  3. Meanwhile, warm the tortillas on a hot griddle or frying pan.
  4. Spread warmed tortillas with home-made guacamole.
  5. Add the pan-seared fish.
  6. Add pico de gallo.
  7. Top with corn, shredded lettuce.
  8. Drizzle chipotle mayo on top.
  9. Enjoy!
