Start 2018 off on the right foot with this delicious and incredibly nutritious Pad Thai made with crisp fresh veggies and topped in a delicious peanut based sauce. You don’t even need a stove or a pot — this no-cook dinner comes together in minutes!
Ingredients
Base:
- 1 large zucchini, spiralized*
- 1 large carrot, spiralized*
- ¼ red cabbage, sliced thinly
Dressing:
- 1 tbsp peanut butter
- 1 tsp sesame oil
- 1 tsp soy sauce
- 1 tsp minced ginger
- 1 tsp minced garlic
- 1 tbsp lime juice
- 1 tbsp lime zest
Garnishes:
- Handful sliced green onions
- Handful roasted peanuts
- Handful sesame seeds
Preparation
Start by adding the zucchini, carrot and cabbage to a bowl. Combine dressing ingredients in a bowl and mix. Add dressing over top and garnish with green onions, roasted peanuts and sesame seeds.
*Note if you don’t have a spiralizer, you can shred the vegetables using the large holes on a box grater or using a food processor.
