Vegan Eats: Liv B's Curried Chickpea Burger is a hearty #MeatlessMonday meal with a kick

Whether you’re vegan, vegetarian or just looking to switch things up, this truly delicious meat-free burger is exactly what you need to add a little excitement to your recipe rotation. Bursting with flavour, the chickpea-based dish from Liv B of Liv’s Healthy Life packs a curry-spiced kick, and is hearty enough to keep you full for hours. It’s easily devourable all on its own, or you can sandwich it in a bun with some rich avocado and our special “Secret Sauce” for extra oomph.
Ingredients
- 1 ½ cups canned chickpeas
- 2 tbsp aquafaba (drained chickpea liquid)
- ½ cup green lentils
- 1 tbsp mild or hot curry powder
- 1 tbsp lime juice
- 2 tbsp nutritional yeast
- 3 tbsp quinoa flour
- ½ tsp salt
- ¼ tsp pepper
- ¼ tsp garlic powder
- ¼ cup fresh red bell pepper, chopped
- ¼ cup red onion, finely chopped
- ¼ cup packed cilantro, chopped
- 1 tbsp olive oil
Secret Sauce:
- 1 cup vegan mayo
- 1 tsp lime juice
- 1 tbsp chili sauce (like sriracha)
- 2 tbsp cilantro, finely chopped
- Toasted buns (optional)
Toppings:
- Avocado
- Lettuce
- Tomato
Preparation
First, drain your chickpeas, but keep the liquid — this is called “aquafaba”, and we’ll be using it in our recipe. Rinse the chickpeas and pat them dry.
Next, add the chickpeas to the food processor. Add the aquafaba (it will serve as a binding agent for the burgers).
Drain and rinse the lentils, and add to the processor. Follow up with the dry ingredients: curry powder, lime juice, nutritional yeast, quinoa flour, salt, pepper, and garlic powder. Pulse it until it’s smooth and blended — it should have an almost creamy texture.
Once it’s smooth, add the chopped red peppers, red onion, and cilantro. Pulse slightly, but don’t blend — we want it to stay a little chunky.
Let’s make the patties! Take a handful of the mixture and roll it into a ball with your hands. Add it to a heated and oiled pan, and use a spatula to flatten it slightly to form the patty shape. Cook about 6 minutes on each side.
Let’s make our secret sauce: in a mixing bowl, add your vegan mayo, lime juice, hot sauce, and cilantro. Whisk thoroughly.
Let’s give it a taste! We added ours to a bun with lettuce, tomato, and avocado, but you can try it bun-less, in a lettuce wrap, or on a sweet potato. Don’t forget the secret sauce!
