The midday slump no longer needs to feel inevitable, thanks to these craving-busting oat balls. Filled with protein-rich nuts, energy-boosting dates and all the best autumnal spices, these grab-on-the-go snacks will have you saying goodbye forever to the store-bought variety. Plus, they could not be easier to make. Whip up a big batch and pop them in the freezer for whenever you need a boost. They’ll make a great addition to a school or work lunch, too!

Ingredients

  • 1 cup raw cashews
  • ½ cup oat flakes
  • ½ cup shredded coconut
  • 10 soft medjool dates, pitted
  • ¼ cup + 3 tbsp almond butter
  • 1 tsp ground cinnamon
  • ½ tsp ground cardamom
  • ¼ tsp ground nutmeg

These super-easy, no-bake goodies are a healthy way to quell those cravings.

Combine ingredients in food processor until the consistency is fairly smooth and the mixture easily sticks together. Roll into balls and refrigerate for 4 hours.

Balls may be frozen up to 2 weeks.

Servings: Makes 28-30 balls
