Recipe: Sweet Potato and Carrot Baby Food
This super simple baby food doubles as a soup base for a quick meal for the whole family
Mealtime can be hectic — especially when you’ve got a baby at home. Chef Shahir created a brilliant 2-in-1 meal for a family on the go so you can feed yourself and baby in no time at all. When it comes to baby food, the fewer ingredients the better, and that’s why it’s so easy to make. It’s really just about steaming your veggies and then pureeing them. Shahir recommends steaming your veggies to keep all of the nutrients in. Opt for delicious, seasonal produce like carrots and sweet potatoes and when you’re done, you can use some of the baby food as a stock for a delicious Sweet Potato, Coconut and Ginger Soup.
Ingredients
- 2 large sweet potatoes
- 3 large carrots
Preparation
Peel sweet potatoes and carrots and chop into 1 inch chunks. Fill a medium sauce pot ¾ full of water and place a steamer basket on top. Steam for 30 minutes until they are very tender. Add to a blender and puree until smooth. Add a splash of water if you need to loosen the mixture.
Remove half of puree and store in small resealable containers in your fridge or ice cube trays in the freezer. It will stay fresh in the fridge for a couple of days.
