Recipe: No Knead Potato Cheese Focaccia

Ingredients
- 3 ¼ cup bread flour
- 1 tbsp kosher salt
- ½ tsp instant yeast
- 1 ½ cup water
Topping:
- 1 cup grated cheese (smoked cheddar, old cheddar, gouda etc.)
- 1 potato, peeled and thinly sliced
- 2 tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Preparation
Combine flour, yeast and salt in a large bowl. Add water and mix with hands or spoon until combined. Cover bowl with plastic wrap and let proof for 8-24 hours.
Sprinkle board with flour and transfer dough to board. Form with hands into a loose ball. Transfer seam side down onto an oiled sheet tray or baking dish of desired shape. Gently form dough into desired shape. Cover with plastic wrap and rest at room temperature for 2 hours.
Preheat oven to 450F. Use fingertips to dock dough all over surface. Lift up dough gently to let out any air bubbles. Spread cheese over surface, then top with potato slices. Brush with olive oil, sprinkle with sea salt and pepper.
Place in middle rack in oven, bake for 20-24 minutes.
