In 2016, Canada exported over 1,800 tons of cheddar cheese, and over the last decade, aged cheddar from Quebec has often taken top honours at the World Champion Cheese Contest in Wisconsin.
Vincent Banville, a researcher who specializes in cheesemaking technology, says that you can't have exceptional cheddar without great tasting milk.
