Bahamian flour biscuits

Cordell Wells says this recipe is his grandmother's

Ingredients

  • 7 cups flour
  • 3 cups sugar
  • 3 eggs
  • 3 tsp baking powder
  • 3 tsp nutmeg, allspice, and mace
  • ½ a can of evaporated milk
  • 2 tsp salt
  • 1 ½ heaping tbsp of shortening
  • 2 tsp vanilla extract

Method

  1. Preheat oven to 350F
  2. Mix all ingredients together until dough resembles a soft slightly wet dough.
  3. Generously flour your surface and your dough and roll out to about 1/3 of an inch in thickness and cut with a circle cookie cutter of about 3 inches in diameter.
  4. Bake on cookie sheet lined with parchment paper, about 6 per pan.
  5. Bake until a golden brown colour peeks around the sides and biscuits are very firm.
  6. Cool on a cooling rack.
  7. Cookies should be very crunchy.
  8. Serve with your favourite hot beverage for dipping
