Scientists are learning more about the medicinal value of pigments in purple carrots and potatoes
Food scientists say there may be even better choices than your average garden-variety greens.

A clinical trial is testing vegetables like drugs to see if the phytochemicals in plant pigments can change risk factors associated with cardiovascular disease, such as cholesterol levels.
