Pomegranate Champagne Cocktail
Ingredients
- 4 oz Champagne (or prosecco)
- 2 oz pomegranate juice (store-bought or freshly-muddled from the arils of 1 large pomegranate)
- 2 oz Cointreau
- 2 sprigs of mint leaves
- 2 tbsp pomegranate arils
- 2 orange peel discs, approx. 1 inch in diameter
Preparation
Chill 2 coupe glasses in the freezer for around 20 minutes.
If preparing fresh pomegranate juice, muddle the arils or add to a blender and strain.
Distribute the pomegranate juice and Cointreau evenly into each chilled coupe glass.
Slowly pour 2 ounces of champagne down a mixing spoon into each coupe glass to avoid using bubbles and gently stir.
Sprinkle a tablespoon of pomegranate arils into each cocktail.
Smack a sprig of mint leaves around each glass to release the aroma, then garnish each drink with a sprig.
Slice along the skin of an orange to create 2 round orange peel discs.
Light a wood match off to the side, about 3 inches above each cocktail. Pinch the orange peel with the skin facing toward the flame to express the oils and allow the cocktail to absorb the smoky citrus flavour.
Makes 2 servings.
