Homemade watermelon-lime soda: A refreshing drink to stir up this summer
Inspired by the fresh lime sodas of her childhood, Dhivya Subramanian’s recipe is a perfect warm-weather drink
When I’m in India, one of my favourite things to order is a fresh lime soda. Practically every restaurant has one on the menu, and growing up in a hot country, I drank them all the time. This version with watermelon, perfect for a crowd, is sweet, refreshing and comes together in minutes.
The night before your party, simply blend the watermelon-lime mixture and chill until you're ready to serve. Then add the sparkling water, and if you're making this drink for adults, you could even add a splash of vodka or gin. But I like it as is!
Ingredients
- 6 cups (approx. 750 g) watermelon from 1 small seedless melon, chopped
- ¼ cup fresh lime juice
- ⅔ cup sugar, or more to taste
- 1 tsp sea salt
- 1 cup ice
- 1 cup cold tap water
- Cold sparkling water, as needed
- Slices of lime, to garnish
- Mint sprigs, to garnish
Preparation
Add the watermelon, lime juice, sugar, salt and ice to a blender and purée until smooth. Add the water and stir. Strain the juice for a smoother consistency, or simply pour the mixture into a jar with a tight-fitting lid.
You can store the juice in the fridge overnight or enjoy it right away. When ready to serve, stir the juice to redistribute the pulp, put ice in a glass and fill about two-thirds of the way with juice. Then top with sparkling water and garnish with lime and mint.
