Recipe: Hanukkah Potato Latkes

Ingredients

  • 3 lbs potatoes
  • ¼ cup matzo meal or all purpose flour
  • ½ lb white onion, fine dice
  • 3 eggs
  • ¼ cup schmaltz (chicken fat) or olive oil
  • 2 tsp salt
  • 2 tsp Pepper
  • Chopped chives, to garnish
  • Sour cream and apple sauce, to serve

Preparation

Grate half the potatoes and puree the rest in a food processor. Drain as much water as possible by squeezing by hand or in a cheese cloth. Grate the onion. Beat eggs. Mix all ingredients together

In a cast iron pan, heat 2 tablespoons schmaltz (chicken fat) or olive oil. Add more as needed. When hot drop in heaping tablespoons of latke mix.

Fry till golden. Flip. Should be crispy on the outside and soft inside. Drain excess oil with paper towel on plates.

Serve hot with apple sauce and sour cream. Garnish with chives.
