Recipe: No Bake Orange, Honey & Pistachio Trifle

No power? No problem! Shahir’s trifle recipe is a delicious and easy dessert to whip up if you are off the grid, have been hit by a power failure, or are just too hot to turn on the oven.

No power? No problem!  Shahir’s trifle recipe is a delicious and easy dessert to whip up if you are off the grid, have been hit by a power failure, or are just too hot to turn on the oven.

Ingredients

  • 8 oranges (Cara Cara or Navel), segmented
  • 5 cups whipping cream
  • ⅓ cup wildflower honey
  • ¼ tsp salt
  • 2 cups toasted pistachios, roughly chopped
  • 20 Italian "S" shaped cookies
  • 1 trifle bowl

Preparation

Using a sharp pairing knife cut ½ cm slices off the top and bottom of all of your oranges. Place one end down on your cutting board. Following the natural curve of the orange use your knife to cut off the skin and pith. Once removed slice orange into segments, cutting in between the membrane. Set aside.

Add whipping cream, honey and salt to a large bowl and whip until stiff peaks form. Set aside. Add 'S' cookies to a zipper seal bag and crush into medium chunks using a rolling pin or the bottom of a pot.

To assemble reserve one cup of whipped cream and ¼ cup chopped pistachios for garnish. Now divide your ingredients into thirds and layer cookie chunks, whipped cream, orange segments, pistachios and repeat until all ingredients are used up.

For garnish add a decorative dollop of reserved whipped cream and a sprinkle of pistachios. Julienne some of your orange rinds to add on top. Enjoy!
