Recipe: Low-Cal Watermelon Margarita

Low-calorie and cocktail don’t often go hand in hand, so this recipe from Chef Shahir is a must for any and all upcoming fêtes. Made with watermelon and vodka, the cals are kept to a minimum, but combined with fresh herbs and a perfectly rimmed glass, it tastes like summertime with every sip.

Ingredients

  • 4 shots vodka
  • Handful of fresh basil, divided
  • Handful of fresh mint, divided
  • 1 tbsp fine pink Himalayan salt
  • ¼ tsp black pepper
  • 2 limes, zest of 1 lime and juice of 1 lime
  • 4 cups cubed watermelon
  • 2 cups ice

Preparation

To a large liquid measuring cup add half of herbs and vodka. Muddle so herbs infuse in vodka, let rest to infuse.

Next take half of remaining herbs and finely mince, mix with fine pink Himalayan sea salt, black pepper and zest of 1 lime, transfer to a plate larger than your glass rim. Use a ¼ of a lime to rim each glass, then dip rim in salt mixture, set aside.

Add remaining lime juice, watermelon and strained vodka to a blender. Add ice and purée until slushy in texture. Pour into rimmed glasses and garnish with remaining herbs, enjoy!
