Recipe: Korean Kimchi and Green Onion Pancakes

Move over waffles! We’ve got a new side to pair with your fried chicken, Korean Fried Chicken that is. Try these Korean savoury pancakes tonight!
Ingredients
- 6 eggs
- 1 cup white rice flour
- 1 cup kimchi and juices, roughly chopped
- ½ bunch green onions, thinly sliced
- 1 tsp sesame oil
- ½ tsp salt
- ¼ tsp Korean chili flakes
- Vegetable or peanut oil, for frying
Dipping sauce:
- 3 tbsp soy sauce
- 3 tbsp rice wine or white balsamic vinegar
- 1 tsp sesame oil
- 1 stalk green onion, sliced
Preparation
Pancakes:
Whisk eggs in a large bowl. Add remaining ingredients and whisk until everything is combined. Batter should be thick like a muffin batter. Add a splash of oil to a non stick pan on medium high heat. Add ½ cup batter to pan. Flip when browned and cook for another few minutes until both sides are browned and centre is cooked. Serve with Korean fried chicken, garnish with sliced green onion.
Dipping sauce:
Whisk all ingredients together and serve alongside pancakes for dipping.
