Recipe: Fruit Salad, 3 Ways

Fruit Salad doesn’t have to be boring, brown and mushy anymore. We’ve come up with 3 ways to serve up an old fave, including a recipe for a tasty tropical fruit salad platter, and then a parfait and popsicle to use up any leftovers!

Ingredients

Fruit Platter:

  • 2 large dragon fruits
  • 1-2 star fruits
  • 2 mangoes
  • 1 medium papaya
  • 2 cups green grapes
  • 2 cups red grapes
  • 2 cups strawberries, sliced
  • 3 passion-fruits, reserve some seeds for popsicles

Yogurt Sauce:

  • 1 cup Greek yogurt (your choice fat)
  • 1 ½ cups vanilla pudding
  • Zest of half a lemon
  • Juice of 1 lemon
  • 1 tsp pure vanilla extract
  • Pinch of salt

Parfait option:

  • Leftover fruit salad (see recipe above)
  • Leftover yogurt sauce (see recipe above)
  • Store-bought granola
  • Chopped nuts of your choice

Popsicle option:

  • Leftover fruit salad (see recipe above)
  • Leftover yogurt sauce (see recipe above)
  • Chopped nuts of your choice

Preparation

Platter option:

Cut dragon fruit into half moons or cubes, star fruit into 1 cm slices and mango into cubes. Use a melon baller to scoop out papaya, slice grapes in half and cut strawberries into quarters. Add fruit to a large platter, then cut passion fruit in half and scoop out some seeds and juice, scatter over platter and add a decorative dip bowl in the centre.

Mix together Greek yogurt, vanilla pudding, lemon juice and zest, vanilla and pinch of salt. Pour into decorative dip bowl in centre of fruit, serve and enjoy!

Parfait option:

Using leftover fruit from your fruit salad and your leftover yogurt sauce, create parfaits. Take any decorative clear glasses you have and layer first with fruit, followed by granola and nuts and then yogurt and passion fruit seeds. Continue this layering order until parfait glass is full. Serve at brunch or for a healthier dessert option! 

Popsicle option:

Slice leftover fruit as desired and insert onto popsicle sticks. Dip fruit sticks into remaining yogurt sauce and lay flat on a parchment lined tray, or lay naked fruit sticks flat and drizzle with yogurt sauce after. Sprinkle nuts of your choice, or passion fruit seeds on top. Freeze for 4 hours and enjoy!
