Recipe: Chocolate Walnut Banana Bread

Ingredients
- ¼ cup unsalted butter, softened
- 2 tbsp coconut oil, room temperature
- ¾ cup brown sugar
- 2 large eggs
- 1 cup mashed, thawed, drained bananas
- 1 cup all-purpose flour
- ¼ cup whole wheat flour or ground oats
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp kosher salt
- ½ tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp freshly ground nutmeg
- ½ cup full fat sour cream
- 1 tsp vanilla extract
- 1 ripe banana, diced
- ½ cup toasted walnuts, chopped
- ½ cup dark chocolate chips
Streusel topping:
- 2 tbsp unsalted butter, softened
- 2 tbsp dark brown sugar
- 2 tbsp all-purpose flour
- ½ tsp ground cinnamon
- ½ tsp kosher salt
- 1 tbsp turbinado sugar
Preparation
Preheat oven to 350F and grease a 10 ½– by 5 ½–inch loaf pan with cooking spray. In a medium bowl, whisk together all purpose flour, whole wheat or oat flour, baking powder, baking soda, salt and spices and set aside. In a separate bowl, mix together all streusel ingredients with fingertips until it is a coarse crumb, set aside.
Using a stand or hand mixer in a separate bowl, cream together butter, coconut oil and brown sugar until light and fluffy, 4-5 minutes. Add eggs one at a time, mixing in between additions. Mix in mashed bananas, sour cream and vanilla and scrape down bowl. On low speed, mix in dry ingredients, taking care not to overmix. Fold in diced bananas, chocolate chips and toasted walnuts.
Pour batter into prepared loaf pan and spread evenly. Sprinkle loaf with turbinado sugar, and crumble streusal topping onto loaf. Bake for 50-60 minutes, until an inserted skewer comes out clean. Let cool for 20 minutes before slicing.
