What to cook in July: Fresh recipes for no-cook meals and picnics
The peak of summer calls for easy dishes that are perfect for taking outdoors
As the sun reigns over July, the lure of the kitchen wanes in favour of meals that require minimal to no heat. This month, we're interested in low- and no-cook dishes, especially if they're good for the quintessential summer activity of picnicking.
Canadian farmers' markets and grocers finally start to really fill with fresh produce in July. From juicy berries and stone fruits to fresh cucumbers and bell peppers, there are lots of ingredients to inspire your summer menus. Grab the last of the zucchini blossoms while you can, and take advantage of the bounty of peas, lettuce and cherries.
I could eat the same thing every day: a slice of toasted bread topped with ripe peaches and peanut butter in the morning, and a classic tomato and mayo sandwich in the evening. At this time of year, the simplicity of five perfect ingredients is all I need.
There are, however, many more informal meals you can enjoy this month on this list! We've included lots of recipes perfect for casual sharing, like a refreshing sweet pea and ricotta dip, quick-pickled tangy cherry tomatoes and the perfect kimchi picnic sandwiches from Eric Kim. Jason Skrobar's lobster rolls are impressive, delicious, easy — they're everything. And we're pretty excited about Dhivya Subramanian's new summer salad recipe featuring the sweet and smoky flavours of mango, corn and peanuts.
Finally, for a frosty treat to help beat the heat, Nik Sharma's spiced coffee kulfi is a must.
