Spiced Chicken Salad Stuffed Tomatoes

This is not your conventional chicken salad. This one is made with a thick, creamy yogurt, it gets its crunch from red peppers, plus, the sumac and olives give it a bit of a lovely tang. Stuff it into tomato shells, or if you want to throw together a sandwich, you can always spread it on your favourite sourdough bread. Do use a good, thick full-fat yogurt so the ingredients bind well. 

Spiced Chicken Salad Stuffed Tomatoes

Ingredients

  • 8 medium-sized tomatoes
  • ½ cup full-fat Greek yogurt
  • ¼ cup Dijon mustard
  • ¼ cup finely chopped green olives, castelvetrano or cerignola variety, for example
  • ½ cup red bell pepper, diced ¼-inch thick
  • 3 tbsp finely chopped fresh dill, divided
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 2 tsp sumac
  • 1 tsp Kosher salt, or more, to taste
  • 4 cups shredded roasted or rotisserie chicken

Preparation

Cut the top ½ inch off of tomatoes. Scoop out the flesh and turn them upside down on a paper towel to drain.

In a medium bowl, combine the yogurt, mustard, olives, red pepper and 2 tablespoons of dill, the olive oil, lemon juice, sumac and salt. Add the chicken and gently mix to combine. Taste for salt and add more, if needed. Spoon the chicken salad into tomato shells, dividing equally. Sprinkle the remaining tablespoon of dill evenly over each stuffed tomato.
