Festive recipes for vegans and meat-lovers alike this Eid ul Adha
With a Lamb and Apricot Pilaf, Vegetable Biryani and Eggplant Borani on the menu, there’s a dish for all
Naturally, in most Muslim households, the typical Eid ul Adha menu centres around meat-based recipes. Following the Abrahamic tradition, Muslims celebrating the 'Festival of Sacrifice' commemorate Abraham's supreme offer to sacrifice his son by offering an animal and generously sharing its meat — in equal parts — with the economically vulnerable, with their friends and community, and with their family. Still, many of us have adopted a vegan or vegetarian lifestyle, so in the spirit of conviviality, I have created a diverse menu which can be equally enjoyed by all on this festive occasion. My personal favourite is this cinnamon-scented lamb and apricot pilaf, but I have also created a vegetarian and vegan dish which will beautifully round off the menu at your Eid ul Adha gathering.
