Hard-boiled eggs get all the attention around Easter, and we do love a cute, pastel-dyed egg, but we're here to remind you of their awesomeness beyond their ability to absorb watercolours!

Eggs are maybe the most versatile ingredient you have in your fridge. They are amazing for their ability to be both a super-casual and comforting, batch, brunch solution (hi, scrambles!) and also a simple, elegant entertaining idea for weeknight dinner parties. Example: a perfectly-made omelette served with some spring greens, charcuterie and sparkling wine that you picked up on the way home will make you a star in your friends' eyes at that impromptu, Wednesday night dinner.

Here, just a few ways we love to have 'em right now, from saucy, to bready, to whipped into an airy dessert.
