Batch cocktails for your Super Bowl party

You could serve beer. Or you could serve Beergaritas.

There's nothing wrong with having a cooler stocked with great beer for your party, but if you're going to all the trouble of making the ultimate Super Bowl spread, why not step your drink game up too?

The following recipes are inspired by this year's Super Bowl host city, Houston, Texas. They're crafted so that you can make batch versions to satisfy the gang — at least for the first half of the game.

Spiked Sweet Tea

Iced tea, sweetened or not, is the hot-weather drink of the American South. Marion Cabell Tyree, the Texas-born author of Housekeeping in Old Virginia, is credited with the oldest known recipe for sweet tea, the drink from which we drew inspiration for this Super Bowl Spiked Sweet Tea. If you have a Texas-distilled bourbon, use it, but any bourbon will taste great in this recipe.

  • 6 cups of water (4 cups for the tea concentrate, 2 cups for adding at serving time)
  • 8 tea bags (Any black tea like Earl Grey or Orange Pekoe)
  • 1 cup sugar
  • 1 cup bourbon
  • Handful fresh mint leaves
  • 1 orange, sliced
  • Ice

In a pot, bring four cups of water to boil. Turn off the heat, add the tea bags and steep for five minutes. Remove and discard tea bags, and add the sugar to the pot, stirring until it has dissolved. Pour the mixture into a heatproof pitcher or jar and place it in the refrigerator to let chill completely. If you're making this ahead, you can put leave the mixture in the refrigerator overnight.

When ready to serve, add the tea concentrate to a serving pitcher or punch bowl. Add the bourbon and two cups of cold water. Stir to incorporate. Add the mint leaves, orange slices and ice. Pour the tea into glasses filled with ice and serve.

Makes 6 to 8 glasses.

Beergarita

With its proximity to Mexico, tequila and margaritas are popular fixtures on Texas bar menus. There are Texas-based tequila distilleries, but any tequila will do for this recipe. For Super Bowl parties, which kick off early, Beergaritas, rather than stronger margaritas, are better-suited for sipping on throughout the game.

  • 2 teaspoons of smoked salt (use regular sea salt if you don't have smoked salt)
  • 2 limes, cut into wedges
  • 1 can limeade concentrate
  • 1 cup tequila (white or dark)
  • 4 bottles (341 ml each) lager (like Corona or Mill St. Organic)
  • ¼ teaspoon salt
  • Ice

Put the smoked salt on a small plate. If there are large salt crystals, use the bottom of a glass to crush them into smaller pieces. Rub a lime wedge along the rims of glasses before rolling the rims in the smoked salt.

In a pitcher, combine the limeade, tequila, beer and salt. Stir to incorporate the salt. Add a generous scoop of ice to each glass and pour the mix into the glass. Garnish each glass with a lime wedge.

Makes 8 glasses.
