Work the stalks into martinis, cakes, compotes and more — before they're gone

Rhubarb, the perennial trumpeter of fresh local produce, has emerged for the 2023 season and we don't want you to miss a chance to enjoy it. Recipe developer Marcella DiLonardo said that, "Since the sweet-tart staple is only available during the spring and summer seasons, I try to feature it in as many dishes as I can before it goes back into hibernation." Her recipe for Chevron Rhubarb Almond Cake, included here, not only shows off rhubarb's flavour but its striking pink stalks too.

There are four more recipes for you to try, including a "mouth-watering" rhubarb compote by Jamie Oliver that you can serve with savoury meat dishes, a couple of baked tarts where it's paired with its good friend, the sweet summer strawberry, and a shrub martini that's perfect for toasting the beginning of spring.
